Sprinkle the chicken with salt and pepper. Heat the butter in a frying pan. Add the chicken. Grill the chicken, holding it down with some kind of weight. Cook for 5-10 minutes on medium heat.

Remove the chicken. Cut the chicken into pieces and place in a bowl.
Add garlic and coriander powder to the pan in which the chicken was cooked. Stir. Cook for a few minutes. Add water or milk. Simmer for a few minutes.
Add the sauce to the bowl with the chicken. Cook in the oven for a few minutes.→ Or return the chicken to the pan. Simmer for a few minutes.Finish.

・This recipe is a combination of various recipes written in Georgian.・Grilling the chicken while pressing down on it will produce a good amount of chicken oil. Emulsify this chicken oil.・The locals use a traditional clay pot called Ketsi.・Many local recipes call for a whole chicken. If you can get one, you'll get a lot of chicken oil. This should be closer to the local flavor.
