What kind of dish is this?

This is a Peruvian dish of stir fried beef and vegetables mixed with French fries.
It is one of Peru’s most beloved dished and is popular in the surrounding countries.
There are many derivative versions of this dish, such as beef replaced with chicken or rice replaced with noodles.

Etymology

・Lomo = beef tenderloin
・saltado = stir fry

History

In 1849, people who moved to Peru from southern Guangdong Province of China as workers were greatly involved.
They imported ingredients to recreate the taste of China and also began to grow ingredients in Peru.
But, in addition to the distance between Peru and China, the climate and culture are different.
Not all of the ingredients were available, and it was not possible to make the same dishes as in China.

On the other hand, over time, immigrants married Peruvians, became accustomed to Peruvian culture, and a new cuisine was born using Peruvian ingredients.
Lome saltado is the result of a combination of seasonings, ingredients, woks and Chinese cooking techniques brought by them, and potatoes and tomatoes native to Peru.

Supplement

・Origin of potato is around Lake Titicaca(Peru, Bolivia). There are about 300 types of potatoes in Peru.
・Origin of tomato is Peru and Ecuador.
・In 1903, Lomo saltado was described in a Peruvian cookbook.
・By the way, it’s very similar to a Bolivian dish called Pique macho. But, Pique macho is not the same as Lomo saltado. Because the history of its birth is completely different.

Thoughts

When I think of beef and potatoes with rice, as a Japanese, I think of Japanese curry and Nikujyaga(similar to Scouse in Liverpool).
But they are completely different.
It is a dish that is not stewed like those, but stir fried.
It’s stir fried over high heat like Chinese cuisine and uses soy sauce.
If you like Chinese cuisine, this dish will be a fresh take on a familiar flavors.

Ingredients
  

No.1

  • 250 g beef tenderloin / cut into long sticks
  • 3 tbsp soy sauce
  • 3 tbsp vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin

  • 2 tbsp olive oil

  • 15 g garlic
  • 15 g ginger
  • 1 onion / slice
  • 2 tomato / comb cut

Others

  • Free coriander
  • 100 g French fries
  • Free cooked rice

Instructions
 

  • Marinate the beef in soy sauce, vinegar, salt, pepper and cumin for 15 minutes.
  • Heat the oil in a pan and fry the beef. Cook until the surface is cooked.
  • Add the garlic, ginger, onions and tomatoes. Stir fry on high heat for 1 to 2 minutes.
  • Add the marinade juice and coriander. Stir. Season to taste.
  • Add cooked French fries. Stir.
  • Serve with rice.
    Finish.
