What kind of dish is this?

This is a Mauritius dish where chicken is fried with spices, garlic and ginger, and stewed with tomatoes.
A dish with roots in French beef stew Daube.

Name

Daube=French beef stew stewed with vegetables, spices and wine.
Poulet=chicken

History of Mauritius

Mauritius has been colonized by various countries because it is conveniently located as a transit point.
Of those countries, one of the countries that most influenced the current Mauritius food culture is France.
In 1715, France, which had colonized the neighboring island of Reunion, settled in Mauritius.
It became a British territory from 1810, but probably due to a treaty, Britain did not rule and French landlords continued to live.
Mauritius is now an independent member of the Commonwealth of Nations, but is strongly influenced by French culture.

Daube de poulet

Modern Mauritius is a multi-ethnic state.
It is made up of Indians, Chinese, Africans, and French, who have arrived as workers.
Daube de poulet is a dish tailored to the social environment of Mauritius, such as changing beef to chicken in beef stew brought in by the French in the 18th century, and Indians who make up 70% of the population use various spices.

Thoughts

I feel that chicken and dry white wine go well together, so I made it with it.
It is difficult to express, but it is between stew and curry with various flavors.
My recipe has a strong acidity.
Also, using curry powder is delicious.

Ingredients
  

No.1

  • 2 tbsp olive oil
  • 300 g chicken / bite size
  • 1 onion / chopped
  • 10 g garlic
  • 10 g ginger

No.2

  • 1 tbsp thyme
  • 1 red pepper / chopped
  • 1 tsp cinnamon powder
  • 1/2 tsp cumin
  • 1/2 tsp garam masala

No.3

  • 1 canned tomato
  • 1 potato / bite size
  • Free coriander
  • 150 ml white wine
  • 1 tsp sugar
  • 1 chicken stock cube
  • 2 pinch salt
  • 2 pinch pepper
  • 1 rosemary

Instructions
 

  • Stir fry olive oil, chicken, onion, garlic and ginger
    . Until the color changes.
  • Add thyme, red pepper, cinnamon powder, cumin and garam masala. Mix.
  • Add tomato, potato, coriander, white wine, sugar, chicken stock cube, salt, pepper and rosemary. Mix. Cover when boiling. Cook over low heat for 30 minutes. Add water as needed.
    Finish.
